chicken tikka masala recipe

Legend has it that chicken tikka masala didn't originate in India but is actually a Scottish invention! Apparently a Bangladeshi chef in Glasgow created a tomato cream sauce for a customer who claimed his chicken dish was too dry, and thus was born one of the most famous "Indian" dishes in the world!

ingredients

  • 1 ¼ lbs boneless, skinless chicken thighs or breast | 20 ounces
  • 1 medium yellow onion |  1 cup finely chopped
  • 1-inch cube peeled, fresh ginger  1 tsp finely grated
  • 2 tbs plain yogurt
  • 1 cup tomato sauce
  • 4 garlic cloves  |  2 tsp finely grated
  • ¼ cup light cream or half 'n half  | 2 ounces
  • vegetable oil or ghee
  • salt

notes

cooking spices in heated oil or butter releases their flavor and infuses the dish with an additional layer of flavor.

resist the urge to increase the heat while frying onions, otherwise the whole spices may burn and become bitter. if onions start to stick or brown too quickly, add 1 tbs water.

instructions

1 Cut chicken into 1 ½ inch pieces. Finely grate ginger and garlic, and mix well with chicken, yogurt, lime juice, 1 tbs oil, and 1 tsp salt. Set aside for 30 minutes at room temp or overnight in refrigerator. 

2  Heat 1 tbs oil on medium-high. Sauté chicken 5 minutes or until it turns white and remove to a bowl. It will finish cooking later in the curry.

While chicken is cooking, finely chop onion.

Reduce heat to medium and add 1 tsp oil to pan. Add WHOLE SPICES, stir a minute, then add onion. Sauté 5 to 7 min; add a splash of water if they dry out. Add SPICE POWDER and 1 tbs butter; stir for a minute. Add tomato sauce, cover, and simmer 10 minutes; stir occasionally.

Add chicken (including any accumulated liquid) and cream. Simmer 5 minutes until heated through and chicken is completely cooked. Add salt to taste.
