Rogan Josh is a hallmark of Kashmiri cuisine, and was brought to India by the Mughals. The Muslim preparation incorporates shallots while Hindus often use ginger, garlic, and yogurt.  Inspired Indian's recipe includes all of these, but no tomato which is a Western addition.

  • 1 ½ lbs beef or lamb stew meat  24 ounces
  • 3 to 4 large shallots  |  1 cup finely chopped
  • 1-inch cube peeled, fresh ginger  1 tsp finely grated
  • 8 garlic cloves  |  4 tsp finely grated
  • ½ cup plain regular or Greek yogurt  4 ounces
  • vegetable oil or ghee
  • salt

cooking spices in heated oil releases their flavor and infuses the dish with an additional layer of flavor.

resist the urge to increase the heat while frying shallots, otherwise the whole spices may burn and become bitter. if onions start to stick or brown too quickly, add 1 tbs water.


Finely grate ginger and garlic. Cut stew meat into 2-inch cubes. Combine ginger, garlic, and meat with SPICE POWDER, ½ cup plain yogurt, 2 tbs oil, and 1 tsp salt.

2  Preheat oven to 325 degrees. Finely chop shallots.

3 Heat 1 tbs oil in dutch oven* stovetop. Add WHOLE SPICES and stir ~30 sec until they sizzle. Add shallots and sauté 10 min, adding splash of water if they dry out. Add meat and sauté another 5 min.

Stir in ¼ cup water, cover tightly, and bake in oven 75 - 90 min or until tender. Add salt to taste and additional water if desired.

*if dutch oven or other oven-proof saucepan not available, use regular saucepan and either transfer to casserole dish and cover tightly with aluminum foil, then bake as directed or reduce heat to low after adding water in Step 4 and simmer on stovetop (covered) until tender, stirring occasionally and adding water if liquid evaporates.
